times, serif;font-size: 14pt;text-align: justify\">O Workshop de Compostos Bioativos &amp; Qualidade de Alimentos ocorreu na sua primeira edi\u00e7\u00e3o em 2016 na Universidade Federal de Santa Maria (Campus Camobi, Santa Maria, RS). O evento foi organizado conjuntamente entre o Programa de P\u00f3s-Gradua\u00e7\u00e3o (PPG) em Ci\u00eancia e Tecnologia de Alimentos da UFSM, o PPG em Ci\u00eancia de Alimentos e o PPG em Alimentos e Nutri\u00e7\u00e3o, ambos da Faculdade de Engenharia de Alimentos da UNICAMP. Essa primeira edi\u00e7\u00e3o do evento foi a atividade de encerramento do Projeto de mesmo nome, financiado pelo Edital Casadinho\/Procad n\u00ba 06\/2011 (CNPq\/CAPES) no per\u00edodo de 2012 a 2016. Desde ent\u00e3o, o evento passou a ter edi\u00e7\u00f5es bienais, realizadas pelo Programa de P\u00f3s-Gradua\u00e7\u00e3o em Ci\u00eancia e Tecnologia dos Alimentos da Universidade Federal de Santa Maria, com o apoio de pesquisadores da \u00e1rea de Ci\u00eancia e Tecnologia de Alimentos da UNICAMP e UFRGS, bem como de pesquisadores vinculados a PPGs de \u00e1reas afins de institui\u00e7\u00f5es do RS e SC, nomeadamente a UFSC, IFSC, UFCSPA, UNIPAMPA e UFN. A partir da 3\u00aa. edi\u00e7\u00e3o, o evento passou a ser organizado como uma a\u00e7\u00e3o do Projeto Institucional de Internacionaliza\u00e7\u00e3o da Universidade Federal de Santa Maria \u2013 CAPES PrInt: Estrat\u00e9gias farmacol\u00f3gicas e nutricionais para promo\u00e7\u00e3o da sa\u00fade. Essa foi realizada no formato online em 2021.\u00a0<\/span><\/div><p style=\"text-align: justify\"><span style=\"font-family: 'times new roman', times, serif;font-size: 14pt\">A publica\u00e7\u00e3o online dos <strong>Anais do Workshop de Compostos Bioativos &amp; Qualidade de Alimentos<\/strong> re\u00fane resumos das palestras e trabalhos selecionados para apresenta\u00e7\u00e3o em cada edi\u00e7\u00e3o do evento e tem periodicidade bienal, permitindo a difus\u00e3o dos trabalhos na tem\u00e1tica de Compostos Bioativos &amp; Qualidade de Alimentos.<\/span><\/p><p style=\"text-align:
