baseline\"> companheira, produzida e comercializada em qualquer esta\u00e7\u00e3o. Assim, se mistura com o sal da peonada que mant\u00e9m ainda em p\u00e9 essa ancestral produ\u00e7\u00e3o; e, que no fim, vira uma seiva quente, correndo pelo campo, pela carne e em cada vertente, seja no Uruguai, Paraguai, Argentina ou Brasil.<\/span><\/p><p dir=\"ltr\" style=\"line-height: 1.38;margin-top: 0pt;margin-bottom: 0pt\"><span style=\"font-size: 11pt;font-family: Arial,sans-serif;color: #000000;background-color: transparent;font-weight: 400;font-style: normal;font-variant: normal;text-decoration: none;vertical-align: baseline\">A Erva-Mate se tornou mais que uma planta para n\u00f3s, andarilhos do cone sul latino-americano. Virou lenda e at\u00e9 ingrediente de receita culin\u00e1ria. Por\u00e9m, desconhecemos o trajeto da erva at\u00e9 chegar ao pacotinho fechado nas estantes de supermercado, principalmente no Brasil, o maior produtor sul-americano de erva-mate (concentra sua produ\u00e7\u00e3o nos estados do Paran\u00e1 e Rio Grande do Sul). Tamb\u00e9m n\u00e3o conhecemos a identidade de um p\u00e9 de erva-mate, nem a tradi\u00e7\u00e3o que ronda as rodas de chimarr\u00e3o, muito menos o que se passa na mente de algu\u00e9m que ceva um amargo solito. Portanto, te aprochegue\u2026<\/span><\/p><p dir=\"ltr\">\u00a0<\/p><h3><span style=\"font-family: arial, helvetica, sans-serif;font-size: 14pt\"><strong><span style=\"color: #000000;background-color: transparent;font-style: normal;font-variant: normal;text-decoration: none;vertical-align: baseline\">Que tal um mate?<\/span><\/strong><\/span><\/h3><p dir=\"ltr\" style=\"line-height: 1.38;margin-top: 0pt;margin-bottom: 0pt\"><span style=\"font-size: 11pt;font-family: Arial,sans-serif;color: #000000;background-color: transparent;font-weight: 400;font-style: normal;font-variant: normal;text-decoration: none;vertical-align: baseline\">O mate &#8211; ou chimarr\u00e3o &#8211; \u00e9 a principal forma de ingerir a Ilex paraguariensis (nome cient\u00edfico da erva-mate). E assim como n\u00f3s, ela tamb\u00e9m \u00e9 nativa dessa regi\u00e3o que agrega o oeste do RS, de Santa Catarina e do Paran\u00e1, como tamb\u00e9m o Paraguai e o norte da Argentina. Constr\u00f3i, assim, uma rela\u00e7\u00e3o pr\u00f3xima das pessoas com o territ\u00f3rio, uma planta que faz qualquer vivente com saudade da terra ter um peda\u00e7o dela sorvido em cada casa ou galp\u00e3o.<\/span><\/p><p dir=\"ltr\" style=\"line-height: 1.38;margin-top: 0pt;margin-bottom: 0pt\"><span style=\"font-size: 11pt;font-family: Arial,sans-serif;color: #000000;background-color: transparent;font-weight: 400;font-style: normal;font-variant: normal;text-decoration: none;vertical-align: baseline\">Essa rela\u00e7\u00e3o remonta aos ind\u00edgenas e as antigas redu\u00e7\u00f5es jesu\u00edticas, mesmo os padres n\u00e3o obtendo sucesso na proibi\u00e7\u00e3o da erva-mate. Foi nas redu\u00e7\u00f5es que o processo sistem\u00e1tico de extra\u00e7\u00e3o da erva-mate iniciou, dando partida na hist\u00f3ria da vasta produ\u00e7\u00e3o e de consumo atual na Argentina, no Uruguai, no Paraguai e no sul e centro-oeste do Brasil.<\/span><\/p><p><b style=\"font-weight: normal\">\u00a0<\/b><\/p><h3><span style=\"font-size: 14pt;font-family: arial, helvetica, sans-serif\"><strong><span style=\"color: #000000;background-color: transparent;font-style: normal;font-variant: normal;text-decoration: none;vertical-align: baseline\">Riqueza al\u00e9m da plata<\/span><\/strong><\/span><\/h3><p dir=\"ltr\" style=\"line-height: 1.38;margin-top: 0pt;margin-bottom: 0pt\"><span style=\"font-size: 11pt;font-family: Arial,sans-serif;color: #000000;background-color: transparent;font-weight: 400;font-style: normal;font-variant: normal;text-decoration: none;vertical-align: baseline\">Atualmente, outras plantas dominam essas bandas. Por exemplo, o Rio Grande do Sul \u00e9 o quarto maior produtor de soja dentre as unidades da federa\u00e7\u00e3o, superado pelo Mato Grosso, Goi\u00e1s e Paran\u00e1. De acordo com o IBGE, o Estado produziu 13,7 milh\u00f5es de toneladas em m\u00e9dia em 2020-22, mostrando um aperto no ramo da erva-mate no mercado atual.<\/span><\/p><p dir=\"ltr\" style=\"line-height: 1.38;margin-top: 0pt;margin-bottom: 0pt\"><span style=\"font-size: 11pt;font-family: Arial,sans-serif;color: #000000;background-color: transparent;font-weight: 400;font-style: normal;font-variant: normal;text-decoration: none;vertical-align: baseline\">O Brasil \u00e9 o maior produtor de erva-mate, tendo o Paran\u00e1 com 46% da produ\u00e7\u00e3o nacional, com 261.016 toneladas por ano no per\u00edodo de 2020-22. Em seguida o RS, contribuindo com 39%, produzindo 222.344 toneladas por ano e consumindo 1,2 kg per capita, conforme a pesquisa Din\u00e2micas de produ\u00e7\u00e3o e comercializa\u00e7\u00e3o da erva-mate no Rio Grande do Sul, de Abitante, de 2007.<\/span><\/p><p dir=\"ltr\" style=\"line-height: 1.38;margin-top: 0pt;margin-bottom: 0pt\"><span style=\"font-size: 11pt;font-family: Arial,sans-serif;color: #000000;background-color: transparent;font-weight: 400;font-style: normal;font-variant: normal;text-decoration: none;vertical-align: baseline\">Por isso o mate foi reconhecido como a bebida oficial do Rio Grande do Sul e s\u00edmbolo nacional da Argentina. Segundo o governo hermano, o pa\u00eds consome uma m\u00e9dia de 6,4 quilos de erva-mate ao ano por habitante, contrapondo o Brasil.<\/span><\/p><p dir=\"ltr\" style=\"line-height: 1.38;margin-top: 0pt;margin-bottom: 0pt\"><span style=\"font-size: 11pt;font-family: Arial,sans-serif;color: #000000;background-color: transparent;font-weight: 400;font-style: normal;font-variant: normal;text-decoration: none;vertical-align: baseline\">A tradi\u00e7\u00e3o da erva-mate data de mais de mil anos antes da Era Crist\u00e3, sendo consumida e produzida em larga escala desde as tribos ind\u00edgenas at\u00e9 hoje.\u00a0<\/span><\/p><p><b style=\"font-weight: normal\">\u00a0<\/b><\/p><h3><span style=\"font-size: 14pt\"><strong><span style=\"font-family: Arial, sans-serif;color: #000000;background-color: transparent;font-style: normal;font-variant: normal;text-decoration: none;vertical-align: baseline\">Papel do ervateiro<\/span><\/strong><\/span><\/h3><p dir=\"ltr\" style=\"line-height: 1.38;margin-top: 0pt;margin-bottom: 0pt\"><span style=\"font-size: 11pt;font-family: Arial,sans-serif;color: #000000;background-color: transparent;font-weight: 400;font-style: normal;font-variant: normal;text-decoration: none;vertical-align: baseline\">A extra\u00e7\u00e3o da erva iniciou com os nativos, sendo industrializada pelos colonizadores, que modificaram esse processo, dando vida, assim, \u00e0 figura do ervateiro e \u00e0 uma nova produ\u00e7\u00e3o, que se inicia pela colheita (normalmente os ervateiros v\u00e3o em matas profundas ou em plantios de erva-mate e podam v\u00e1rios ramos que s\u00e3o transportadas), indo ao sapeco (tem o intuito de desidratar as folhas, passando-as levemente pela labareda), para, ent\u00e3o, ir \u00e0 secagem (t\u00e9rmino da desidrata\u00e7\u00e3o das folhas) que pode ser feita por meio do carijo ou pelo barbaqu\u00e1; finalizando com o cancheamento ou moagem (tritura\u00e7\u00e3o das folhas feita pelo soque)<\/span><\/p><p dir=\"ltr\" style=\"line-height: 1.38;margin-top: 0pt;margin-bottom: 0pt\"><span style=\"font-size: 11pt;font-family: Arial,sans-serif;color: #000000;background-color: transparent;font-weight: 400;font-style: normal;font-variant: normal;text-decoration: none;vertical-align: baseline\">Em qualquer forma de consumo, seja mastigando as folhas igual aos \u00edndios charruas faziam no Uruguai; ou bebendo o mate ou o terer\u00e9 (comum no centro-oeste do Brasil), que passam por esse processo para serem fabricados, as fun\u00e7\u00f5es da erva no organismo ainda s\u00e3o as mesmas: a elimina\u00e7\u00e3o da fadiga, ser uma bebida diur\u00e9tica e auxiliar na digest\u00e3o. Esse contexto influenciou muito no gosto da erva. Por exemplo, o produto feito no Rio Grande do Sul demorava para chegar ao Uruguai; fazendo a erva ficar levemente mais amarelada, velha e amarga. Isso diversificou o consumo e as tradi\u00e7\u00f5es em cada lugar.<\/span><\/span><\/p><p style=\"font-size: 1rem;border-top-left-radius: calc(-1px + 0.25rem);border-top-right-radius: calc(-1px + 0.25rem);width: 1062px;color: #21376b !important\"><span style=\"font-size: 12pt;font-family: arial, helvetica, sans-serif\"><span style=\"color: #000000;background-color: transparent;vertical-align: baseline\"><span style=\"font-weight: bolder\">\u25caLa yerba hermana:<\/span>\u00a0os argentinos costumam tomar mate quase sempre sozinhos. L\u00e1, a erva, ap\u00f3s acabarem de produzi-la, \u00e9 conservada em um processo chamado de descanso, al\u00e9m de ser menos mo\u00edda que a tradicional brasileira. O descanso se refere ao armazenamento da erva-mate a fim de preserv\u00e1-la; deixando-a mais amarelada e mais amarga<\/span><\/span><\/p><p style=\"font-size: 1rem;border-top-left-radius: calc(-1px + 0.25rem);border-top-right-radius: calc(-1px + 0.25rem);width: 1062px;color: #21376b !important\"><span style=\"color: #000000;font-size: 12pt;font-family: arial, helvetica, sans-serif;background-color: transparent;vertical-align: baseline\"><span style=\"font-weight: bolder\">\u25caA erva da banda oriental:<\/span>\u00a0os uruguaios tamb\u00e9m fazem o processo de descanso. Por\u00e9m, ao contr\u00e1rio dos hermanos argentinos, eles separam as folhas dos palos (ramos de erva). Esse processo de moagem se chama \u201cpura folha\u201d<\/span><\/p><p style=\"font-size: 1rem;border-top-left-radius: calc(-1px + 0.25rem);border-top-right-radius: calc(-1px + 0.25rem);width: style=\"font-weight: bolder\">\u25caA erva tupiniquim<\/span>: n\u00f3s brasileiros aproveitamos tanto os ramos como as folhas da erva-mate, deixando-a mais suave, al\u00e9m de ingerirmos ela ainda O enviado divino entregou-lhes uma planta, chamada Caa. Prometeu que o l\u00edquido extra\u00eddo dela seria um amigo silencioso, como tamb\u00e9m traria vigor ao velho e ao seu povo.
